HOW TO SELECT
Look for berries that are even in color and texture. They are not pungent in their aroma, but if very ripe will have a heady, wine-like smell. Avoid berries that are collapsed, moldy, or variegated, which can indicate age and a shorter shelf life. Beware of berries that are sold in too deep a container. Drupelets are very delicate and easily crushed by the weight of other berries piled on top.
SIGNS OF RIPENESS
The color should be lively and not have signs of white or green in the undertone. The berries will be heavy with juice and pull from the plant easily.
HOW TO STORE
Donât! These berries are best eaten within a few days of harvest or purchase. Storing in the fridge will help extend their shelf life, but the cold will dampen the flavor. Be sure to bring back to room temperature before eating to reinvigorate the aromatics. All drupelets take well to freezing, so if you arenât sure youâll get to them, individually freeze for later.
NOTES
Sun scald shows up on drupelets during excessively sunny and hot summers and presents as bleached spots on otherwise good-looking fruit. Thereâs nothing wrong with those berries, and so there is no harm in eating them, but sometimes the texture is a bit mealy.
The darker the fruit, the more bioflavonoids and antioxidants present, which are linked to anti-aging properties.
